Savory Pie with Veggies and Cheese

Ingredients

For the filling

  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 carrot, grated
  • 1 small onion, finely chopped
  • 150 g (5 oz) cheese, grated (cheddar, mozzarella, or a mix)
  • 3 eggs
  • 200 ml (¾ cup + 1 tbsp) milk
  • 100 ml (⅓ cup + 1 tbsp) vegetable oil
  • 200 g (1⅔ cups) all-purpose flour
  • 10 g (2 tsp) baking powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano or Italian seasoning

Optional additions

  • Corn kernels
  • Spinach
  • Cooked ham or bacon
  • Chopped parsley 

    Instructions

    1. Prepare the vegetables

    1. Preheat the oven to 180°C (350°F).
    2. Grease and line a 22–24 cm (9-inch) baking pan.
    3. Heat a tablespoon of oil in a skillet.
    4. Sauté the onion for 2–3 minutes.
    5. Add the zucchini, bell pepper, and carrot.
    6. Cook for about 5 minutes until slightly softened.
    7. Let cool.

    2. Make the batter

    1. In a large bowl, whisk together the eggs, milk, and oil.
    2. Add the flour, baking powder, salt, pepper, and oregano.
    3. Mix until smooth.

    3. Add filling

    1. Fold the cooked vegetables into the batter.
    2. Add most of the grated cheese, reserving a handful for the top.

    4. Bake

    1. Pour the mixture into the prepared pan.
    2. Sprinkle the remaining cheese over the surface.
    3. Bake for 35–40 minutes, or until golden brown and a toothpick inserted in the center comes out clean.

    5. Serve

    1. Let cool for 10 minutes before slicing.
    2. Serve warm or at room temperature.

    Tips

    • Add feta, goat cheese, or Parmesan for extra flavor.
    • Use any vegetables you have on hand, such as mushrooms, broccoli, or peas.
    • Great for lunch boxes, picnics, or a light dinner with a salad.
